Chipotle Mexican Grill announced Tuesday that it is testing pollo asado in 95 restaurants in Cincinnati and Sacramento, introducing a new chicken variant for the first time.

Pollo asado is made with grilled chicken, garlic, fresh lime, guajillo peppers and hand-chopped cilantro. It will be available in two participating markets for a limited time.

Under the leadership of CEO Brian Niccola, who previously led Taco Bell Yum Brands, the company has accelerated the addition of new menu items through a process it calls “milestone testing.” The chain has a strategic strategy for new launches, making many of them time-limited to attract customers to their restaurants and keep the menu from bloating. This year he released cauliflower, rice and brisket as a time-limited edition, and quesadillas in digital format only.

“Chicken has long been the top protein choice among Chipotle guests,” CMO Chris Brandt said in a statement. “Since the famous Adobe Chicken recipe is already on our menu, we decided it was time to add another variation and our new flavorful Pollo Asado Chicken is another great addition to our real ingredients.”

Chipotle is up 30% this year, pushing its market value to $ 50.6 billion.
